I would suggest a little experimenting first before you start mixing this up. Make sure the cream is warm and from within in order to get the right texture. Then mix mixture with your stand mixer. Add sugar if you are still using unsweetened, or add salt if you choose to add it instead. The cream should be smooth by this point. The water would still be cold, but not nearly so cold that it would affect the texture of ice. If salt is added, it's going to add a lot of salt.
